This is a wonderful meal that is super easy and full of anti-oxidants and Omega 3’s. As great as that may be, the best part is it can all be cooked outside on the grill.
1 tsp each of paprika, cumin, chili powder, garlic powder, onion powder, and salt
1/8 tsp of pepper
Mix ingredients together. Take two 6-7 ounce salmon filets and drizzle with olive oil then gently massage the rub onto both sides of the salmon. Make two aluminum foil boats and set each piece of salmon in their own boat. Set aside.
1 sliced red bell pepper
1 sliced yellow bell pepper
12 asparagus tips
Place in a bowl and drizzle olive oil over the peppers and asparagus. Take 2 tablespoons of chopped garlic, 1 teaspoon of salt and toss all together. Place on a cookie sheet.
Turn the gas grill on low. Place the two salmon boats and the cookie sheet directly on the grill and cook for approximately 20 minutes. Stir peppers every 5 minutes. Salmon will flake apart with fork when done. Enjoy!!
